A quick and delicious spam fried rice dish that comes together in just 30 minutes, perfect for lunch, dinner, or breakfast.
Ingredients
- 2 cups cooked rice
- 1 cup diced spam
- 2 eggs
- 1/2 cup green peas
- 1/2 cup diced carrots
- 1/2 cup corn
- 3 tablespoons soy sauce
- 2 tablespoons butter
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large skillet or wok, melt the butter over medium heat.
- Add the diced spam and cook until slightly crispy, about 3-4 minutes.
- Push the spam to one side and scramble the eggs on the other side until fully cooked.
- Add the cooked rice, green peas, carrots, and corn. Stir to combine.
- Pour soy sauce over the mixture and season with salt and pepper. Stir everything together and cook for an additional 2-3 minutes until heated through.
- Garnish with green onions if desired and serve hot.
Notes
For best results, use cold leftover rice. Feel free to customize with other vegetables or proteins.
