Ingredients
- 4 cups (946 ml) water
- 1 tsp (5 ml) hondashi powder
- ¼ cup (60 g) seaweed, broken into small pieces
- 8 oz (227 g) soft tofu, drained and cut into ½-inch cubes
- 3 tbsp (45 ml) red miso paste, white miso and yellow miso also work!
- 3 green onions, thinly sliced
- Vegetable oil, optional, for serving
- Toasted sesame seeds
- Watercress or microgreens
- Vegetable oil
Instructions
- Prepare the broth. Pour 4 cups of water into a large saucepan and bring it to a vigorous boil. Incorporate 1 teaspoon of hondashi powder, ¼ cup of broken seaweed, and 8 ounces of tofu cut into cubes. Mix thoroughly. Once the soup returns to a boil, reduce the heat to a low simmer and let it cook for 5 minutes.
- Incorporate the miso paste. Switch off the heat. Put 3 tablespoons of miso paste in a fine mesh strainer, then immerse it in the soup. Use a spatula or small whisk to aid in dissolving the miso paste into the liquid (then take out the strainer). Top with thinly sliced green onions, and savor it warm with a dash of hot chili oil drizzled on top!
