Ingredients
- 1 (15-ounce) can of black beans, rinsed and drained
- 1 large ripe avocado
- ½ cup of frozen or canned corn, thawed or drained
- ¼ cup of finely chopped red onion
- ¼ cup of fresh chopped cilantro
- 1 tablespoon of lime juice, freshly squeezed
- ½ teaspoon of cumin powder
- ¼ teaspoon of chili powder
- Salt and black pepper, to taste
- 4 large (10-inch) flour tortillas, soft and pliable
Instructions
- In a medium-sized mixing bowl, add the mashed avocado and mash it until desired consistency.
- Blend in freshly squeezed lime juice to the mashed avocado.
- Fold in the rinsed and drained black beans, thawed or drained corn, finely chopped red onion, and chopped fresh cilantro.
- Season with cumin, chili powder, salt, and black pepper, mixing gently.
- Warm the tortillas if desired to enhance pliability.
- Lay a warm tortilla flat and fill it with one-quarter of the black bean and avocado mixture.
- Roll the burrito by folding in the short sides, then tuck the filling and roll it tightly.
