Description

Quick and delicious vegan burrito wraps made with black beans, avocado, and fresh veggies, perfect for a nutritious meal any time.


Ingredients

  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 large ripe avocado
  • ½ cup of frozen or canned corn, thawed or drained
  • ¼ cup of finely chopped red onion
  • ¼ cup of fresh chopped cilantro
  • 1 tablespoon of lime juice, freshly squeezed
  • ½ teaspoon of cumin powder
  • ¼ teaspoon of chili powder
  • Salt and black pepper, to taste
  • 4 large (10-inch) flour tortillas, soft and pliable


Instructions

  1. In a medium-sized mixing bowl, add the mashed avocado and mash it until desired consistency.
  2. Blend in freshly squeezed lime juice to the mashed avocado.
  3. Fold in the rinsed and drained black beans, thawed or drained corn, finely chopped red onion, and chopped fresh cilantro.
  4. Season with cumin, chili powder, salt, and black pepper, mixing gently.
  5. Warm the tortillas if desired to enhance pliability.
  6. Lay a warm tortilla flat and fill it with one-quarter of the black bean and avocado mixture.
  7. Roll the burrito by folding in the short sides, then tuck the filling and roll it tightly.
