A comforting and healthy pumpkin hummus that combines chickpeas and pumpkin purée with warm spices, perfect for fall gatherings.
Ingredients
- 1 15-ounce can chickpeas, drained and rinsed
- 1 15-ounce can pumpkin purée (not pumpkin pie filling)
- 2 cloves garlic, minced
- ½ lemon, juiced
- ⅓ cup tahini
- 1 tablespoon pure maple syrup
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- ¾ teaspoon ground cinnamon
- A pinch of cayenne pepper
- ¼ cup olive oil
- ¼ cup ice water
Instructions
- Place the drained chickpeas, pumpkin purée, and minced garlic in the bowl of a food processor. Pulse a few times until small pieces form.
- Add lemon juice, tahini, maple syrup, kosher salt, cumin, cinnamon, and cayenne pepper.
- With the processor running, stream in the olive oil and let it run for 2-3 minutes until a chunky hummus forms.
- Slowly add ice water one tablespoon at a time until the desired creaminess is achieved.
- Scrape down the sides as necessary and adjust the water for texture preference.
Notes
For a richer flavor, you can roast the garlic before using. Adjust spices to fit personal taste and consider chilling the hummus before serving to enhance flavor.
