Description

A comforting and healthy pumpkin hummus that combines chickpeas and pumpkin purée with warm spices, perfect for fall gatherings.


Ingredients

  • 1 15-ounce can chickpeas, drained and rinsed
  • 1 15-ounce can pumpkin purée (not pumpkin pie filling)
  • 2 cloves garlic, minced
  • ½ lemon, juiced
  • ⅓ cup tahini
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • A pinch of cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water


Instructions

  1. Place the drained chickpeas, pumpkin purée, and minced garlic in the bowl of a food processor. Pulse a few times until small pieces form.
  2. Add lemon juice, tahini, maple syrup, kosher salt, cumin, cinnamon, and cayenne pepper.
  3. With the processor running, stream in the olive oil and let it run for 2-3 minutes until a chunky hummus forms.
  4. Slowly add ice water one tablespoon at a time until the desired creaminess is achieved.
  5. Scrape down the sides as necessary and adjust the water for texture preference.

Notes

For a richer flavor, you can roast the garlic before using. Adjust spices to fit personal taste and consider chilling the hummus before serving to enhance flavor.
